Course chutney and relish

Ingredients
- 200 g ketchup
- 100 ml cider vinegar
- 100 g dark muscovado sugar
- 1 tbsp tomato puree
- 1 tbsp Worcestershire sauce
- 1 tsp smoked paprika
- ½ tsp smoked chipotle tabasco -optional
- ½ orange juice
- 50 ml whiskey - optional
- 1 garlic clove crushed
- 15 g butter
Instructions
- In a saucepan, place the ketchup, cider vinegar, muscovado sugar, tomato puree, Worcestershire sauce, smoked paprika, tabasco, orange juice, whiskey, garlic. Bring to the boil and simmer for 3-4 minutes until the sugar have dissolved and the sauce is glossy.
- Remove from the heat, transfer to a jar or a bowl, and leave to cool.
- Store, covered, in the fridge for a few days or in a sterilized jar for 2 months.
Notes
If you are not a fan of whisky, you can easily omit from the sauce.
