Prawns Flatbread Kebab Wrap

Ingredients
- 150 g king prawns fresh
- 2 cloves garlic chopped
- ½ tsp chilli flakes
- 1 lemon zest
- 1 tbsp olive oil
- ¼ cucumber grated
- 4 tbsp natural yoghurt
- 4 leaves mint chopped
- 1 lime juice and zest
- 1 onion sliced
- 1 red pepper sliced
- 1 courgette diced
- 3 tbsp kale sliced, optional
- 100 g cherry tomatoes sliced
- 4 salad leaves
- 4 pita bread
- salt pepper
Instructions
- Place the prawns in a bowl and add the garlic, chilli flakes, lemon zest and olive oil. Toss to coat and set aside to marinate for at least 5 minutes or a few hours covered in the refrigerator.
- In the meantime, prepare the tzatziki, in a bowl, combine the grated cucumber and yoghurt with some mint, olive oil, seasoning and lime juice. Add some garlic if desired.
- Preheat a large pan and drizzle extra oli if desired. Add the sliced onion and sauté for 30 seconds.
- Next , add the prawns, courgette, and kale and sauté for 1-2 minutes until the prawns are fully cooked through. Remove from the heat.
- Warm the pita bread if needed and spoon some tzatziki, cherry tomatoes, cooked prawns and vegetables, some salad leaves, a drizzle of olive oil if needed and extra seasoning too.
- Fold and enjoy while warm.
