Preheat the oven to 180˚C. prepare a baking tray with parchment paper.
In a bowl, combine the flour, butter and parmesan until it resembles a crumb texture.
Add the salt, pepper and thyme leaves and stir once more to disperse the ingredients.
Add in the eggs and olive oil and work it comes together into a uniform dough.
Roll the dough on a floured surface and using a 5cm diameter party cutter, press and create biscuits.
Transfers them to a baking tray, sprinkle wit hextra salt if desired and place them in the oven to bake for 10-12 minutes until lightly coloured.
Remove from the oven and set aside to cool.
Store in an airtight container for 2 weeks or so. If the biscuits are starting to soften, place them back for 2-3 minutes in a low oven to remove the excess humidity!
