One-pan Tomato Pasta

  • 200 g pasta shells
  • 400 g tin diced tomato
  • 1 onion diced
  • 1 cloves garlic chopped
  • 4 mushrooms sliced
  • 1 tsp. mixed herbs
  • 1 pinch chilli flakes
  • 2 tbsp. olive oil
  • 200 ml water or vegetable stock boiling
  • 1 tbsp fresh parsley chopped – optional
  • 50 ml cream
  • 4 tbsp. grated parmesan
  • Salt and pepper


  • Place all the ingredient in a saucepan except the cheese and half of the parsley.
  • Bring to the boil over high heat. Reduce the heat, and simmer, stirring and turning the pasta with a spatula to prevent sticking for 12-15 minutes until the pasta is al dente and almost all the liquid has evaporated. Add extra liquid if needed during the cooking process.
  • Add the cream and parmesan and stir to finish the pasta.
  • Remove from the heat and serve immediately with a sprinkle with grated parmesan and a sprinkle of fresh parsley.
