Mascarpone Pasta Bake

Ingredients
- 400 g macaroni or other Pasta
- 1 tbsp oil
- 200 g lardons chopped
- 1 shallot sliced
- 2 garlic cloves thinly sliced
- 100 g mushroom sliced
- 200 g mascarpone
- 75 g grated cheddar cheese
- salt and black pepper
Instructions
- Preheat the oven to 200˚C.
- Cook the pasta according to packet instructions. Drain and set aside.
- Heat the oil in a frying pan and add the lardons, shallot, mushroom, and garlic and cook for 3-4 minutes or until lightly coloured.
- Add in the mascarpone and season with salt and pepper. Over low heat, stir until the mascarpone melt and create a sauce.
- Remove from the heat and stir in the cheese. Check the seasoning.
- Fold the sauce mixture into the pasta ensuring it is evenly coated. Pour the mixture into ceramic dishes.
- Place in a preheated oven for 10 – 15 minutes until the mixture is piping hot and golden brown.
- Serve piping hot.
