Kyiv Turkey burger

Ingredients
- 40 g cold butter cut into 4 flat squares
- 2 garlic cloves chopped
- 2 tbsp mix herbs chopped
- 1 lemon zest
- 450 g turkey mince
- 1 tbsp. milk- optional
- 1 egg
- 2 tbsp. flour to dust the burger
- 1 tbsp oil optional
- 4 slices Mature red cheddar cheese
- 1 to mato sliced
- 4 slices pickled cucumber
- 1 handful of salad leaves
- 4 brioche Burger buns to serve
- salt and pepper
Instructions
- In a small bowl, beat the butter with the garlic, lemon zest, herbs until fully combined. Set aside for a few minutes.
- in a bowl, combine the turkey mince with the egg, milk and seasoning.
- Shape four equal patties about 4-5cm diameter.
- Press the centre of each patty and add a spoon of garlic butter.
- Wrap the mince around and shape to a usual flat patty with a small indentation in the centre. Toss a little of flour around to help set later.
- The butter will help keep the burger moist while grilling but down pierce it or else the butter will run away and flame the BBQ or griddle pan.
- Place the shaped burgers in the fridge covered to rest at least 15 minutes.
- Preheat a griddle pan or barbecue to medium heat. When hot, oil the grill grates and place the burgers onto the grill. Cook for 4-6 minutes on each side or until it reaches 70˚C covered, if possible, with a lid to help the burger cook quicker, turning once.
- Add the cheese over the burgers and place a lid over to allow the cheese to melt over the burger.
- Toast the bun and add some mayonnaise and a few leaves of salad. Add the cooked burger with the cheese and top with your favourite topping such as tomato slices, pickles cucumber, … enjoy immediately.
