Irish Potato Bread

1 x 500g loaf Here in Ireland we love Mash potato. One of my recipe go to for leftover Mashed potato instead of a fish pie is this bread. It uses simple ingredients which gives the soft texture and keep freshness on the bread for a few extra days. The recipe can be turned into buns for burgers too.

Ingredients
  

  • 85 g water lukewarm
  • 7 g dry active yeast
  • 250 g plain flour
  • 5 g table salt
  • 100 g mashed potatoes cold
  • 1 large eggs
  • 50 g butter at room temperature
  • 1 egg wash optional

Instructions
 

  • Firstly, to prepare the dough. Pour the water into a bowl and stir in the yeast until combined.
  • In a second bowl, Sieve in the flour and salt. Create a well and in the centre, add the mash potatoes, eggs and softened butter. Pour the water mixture over and combine the dough until it comes away from the sides of the bowl. Cover with a damp tea towel or cling film and set aside in a warm place for 1 hour or until doubled in size.
  • Roll the dough out on a lightly floured surface and transfer on a greased loaf tin. Set aside for 60 minutes or until doubled in size.
  • Preheat oven to 160˚C/325˚F.
  • Gently brush with some egg wash and bake for 60 minutes. ( about 20 minutes in bun size.)
  • Remove from the oven and Allow to stand for 10 minutes on a rack before serving.
  • Enjoy fresh or toasted!
