Grilled Chicken Toasted Sandwich

  • 2 tbsp oil
  • 2 chicken fillets butterflied
  • 4 slices bread I used sourdough
  • 4 eggs
  • 25 g butter
  • 4 tbsp red onion marmalade
  • 4 tbsp fresh goat cheese or similar
  • 1 to mato sliced
  • 40 g salad leaves
  • Salt and pepper


  • Preheat a griddle pan or large saut√© pan over medium heat.
  • Drizzle some oil on the chicken pieces and place on the griddle pan. Cook depending on thickness for 4-5 minutes on both sides.
  • In the meantime, toast the slices of bread either on a second pan or in the toaster.
  • Once the chicken fillets are griddled, move them aside and keep warm.
  • Cook the fried egg in the same pan with a dollop of butter until cooked to your liking.
  • Once ready to serve, drizzle some butter on the toasted bread. Add some red onion marmalade, fresh goat cheese and slices of tomato. Season with salt and pepper.
  • Add the chicken fillet and the fried egg.
  • Serve immediately with some salad leaves.
