Crispy Chicken Traybake

Ingredients
- 4 chicken breasts part boned
- 2 tbsp. rapeseed oil
- salt and pepper
- 1 to mato sliced
- 150 g cheese sliced
- 2 tbsp. fresh herbs ( sage, oregano or thyme)
- 2 lemon zest and juice
- 4 garlic cloves
- 600 g baby potatoes
Instructions
- Preheat the oven to 200˚C.
- Place the potatoes in a saucepan. Fill with water, season with salt and one cloves of garlic and bring to the boil. Simmer for 15-20 minutes until the potatoes are cooked through. Drain. , place the cooked potatoes On a roasting tray and crush slightly add the raw onion and the garlic on the tray too. keep aside
- On a board, place the chicken breast and slit each breast over top 4-5 times on each breast.
- Place on each a slice of tomato and slice of cheese. Sprinkle with fresh herbs and lemon zest. Season well and drizzle some oil or butter over the chicken and potatoes.
- Transfer onto a roasting tray and place in the oven for 20-30 minutes until the chicken breast are cooked through.
- Remove from the oven, sprinkle over the chicken some fresh rosemary leaves and serve immediately.
