Preheat the oven to 200˚C.
Place the potatoes in a saucepan. Fill with water, season with salt and one cloves of garlic and bring to the boil. Simmer for 15-20 minutes until the potatoes are cooked through. On a board, place the chicken breast and slit each breast over top 4-5 times on each breast.
Place on each a slice of tomato and slice of cheese. Sprinkle with fresh herbs and lemon zest. Season well and drizzle some oil or butter over the chicken and potatoes.
Transfer onto a roasting tray and place in the oven for 20-30 minutes until the chicken breast are cooked through.
Remove from the oven, sprinkle over the chicken some fresh rosemary leaves and serve immediately.
