Creamy Apple and Turnip Soup

Ingredients
  

  • 1 tbsp butter
  • 100 g streaky bacon chopped
  • 1 Onion diced
  • 2 Cloves Garlic crushed
  • 300 g turnip chopped
  • 1 Potatoes diced
  • 1 apple chopped
  • 1 tbsp. fresh sage
  • 1 litre vegetable stock warmed
  • 150 ml cream
  • 50 g parmesan grated plus extra to serve
  • Salt & Pepper

Instructions
 

  • In a saucepan, melt the butter, add the bacon, the onion and garlic. Sauté for 2-4 minutes.
  • Add the turnip, potatoes, apple and sage and season with a little salt and pepper. Add the stock. Cover and cook over a low heat/medium heat for 25-35 minutes until the vegetables are softened.
  • Remove from the heat. Add the cream and place in a food processor and blend until smooth.
  • Check the seasoning.
  • Add some parmesan or mature cheddar and serve immediately with garnish of sliced apple and extra parmesan.
  • Enjoy while warm.
