Heat 1 tbsp of oil in a frying pan over medium heat. Add the onions, garlic and mushroom, thyme and cook for 2 minutes until golden. Season well.
Add the stock and cream cheese and simmer over low heat to create a coating sauce for 2-3 minutes. Remove from the heat and keep warm.
On the griddle pan, place the slices of bread and toast them using the cooking fat from the beef or add a drizzle of oil or butter. toast both sides and keep warm on the side.
Season with salt and pepper.
In the meantime, on a griddle pan, over high heat, season the pan with some salt if desired.
Drizzle the rest of the oil on the minute beef steaks pieces to coat.
Once, smoking hot, add the minute steaks to the griddle pan and sear on high for a minute or two on each side until just seared. Remove from the pan and toss the beef pieces in the mushroom mixture.
Divide the mushroom and beef slices on the toasted bread slices, add extra pepper and enjoy while hot.
for extra flavour and richness, sprinkle some grated cheese!
