Honey Roasted Cheesy Squash

Honey Roasted cheesy squash Bites

This is ideal as an evening supper, or could be a side to your Sunday and Christmas dinner!

Ingredients
  

  • 1 large butternut squash
  • 3 tbsp. olive oil
  • 3 tbsp. Honey
  • 100 g goat cheese or brie
  • 100 g bread crumb
  • 2 garlic cloves crushed
  • 2 scallions sliced
  • 6 tsp mortaste cranberry sauce
  • Salt and pepper

Instructions
 

  • Preheat the oven to 200˚C. prepare a roasting tray with parchment paper.
  • Cut both ends of the squashes and slice into discs. I left the skin on the squash but you can remove it if preferred.
  • Place the squash on the tray. Drizzle with oil add some honey and season well.
  • Place in the oven and roast for 25-30 minutes until just softened.
  • In the meantime, in a bowl, combine the cheese, breadcrumb, scallions with a drizzle of oil, salt and pepper.
  • Transfer the cheese mixture onto the roasted squash pieces and place back for a further 5-8 minutes in the oven until the cheese and bread mixture reach a golden brown colour and are warmed through.
  • Remove from the oven, top with some of the cranberry sauce and serve immediately.
