
Chicken, Chorizo, and Mushroom Pie
Simply Delicious! If you wish you can make this recipe into little individual pies. You can also Use deboned chicken thighs for a more intense flavour.

Ingredients
- 25 g butter
- 1 tbsp olive oil
- 300 g chicken breasts diced
- 2 onions thinly sliced
- 3 cloves garlic crushed
- 200 g mushrooms sliced
- 100 g chorizo cubed
- 150 ml white wine or chicken stock
- 200 ml cream
- 1 sheets of puff pastry-ready rolled.
- 1 Egg Wash made of 1 egg yolk and 1 tsp milk
Instructions
- Preheat the oven to 180°C/350F/Gas Mark 4.
- Heat a large pan with oil and add in the chicken to brown for 2-3 minutes. then, add in the onion, garlic, mushrooms and chorizo. Cook for a further 3 minutes.
- Pour in the white wine or chicken stock and cream and allow the mixture to come to a gentle boil. season with salt and pepper and simmer for 5 minutes until the liquid has reduce by half and thicken a bit. Remove from the heat and transfer the chicken mixture into a pie dish. leave to cool for 10 minutes.
- Brush the rim of the pie dish and the pastry with some egg wash and place the pastry onto the chicken mixture to cover the pie. Seal the edges, brush with some extra egg wash, dot extra slices of chorizo, some black pepper and salt.
- Transfer to a preheated oven and bake approximately 30 – 40 minutes.
- Serve immediately with a green salad.
