Caramelised Onions Pasta

Ingredients
  

  • 50 g butter or oil
  • 4-5 onions chopped
  • 2 cloves garlic chopped
  • 2 spring thyme
  • 100 ml white wine
  • 200 ml cream
  • 1 egg yolk optional
  • 50 g parmesan comte or cheddar, grated
  • Salt and black pepper
  • 400 g pasta linguini or others

Instructions
 

  • Melt the butter in a saucepan over medium heat. Add the onions garlic and thyme. Season with salt, pepper. Sauté for 5-10 minutes, stirring occasionally until the onions become tender and start to caramelise.
  • Add the white wine. Bring back to the boil and simmer a further 2 minutes until the onions are wilted and caramelised throughout.
  • In the meantime, cook your pasta as per pack instruction in a saucepan.
  • Once the pasta are cooked to your liking add the cream and half of the grated cheese to the onion and bring once more to the boil to heat up the cream.
  • Remove from the heat and blend until smooth. Add an egg yolk, blending once more to create a richer sauce.
  • Check the seasoning.
  • Drain the pasta, keeping a few tablespoon of water on the base with the pasta to help create a smoother sauce.
  • Out of the heat, to avoid cooking the egg yolk, Add the onion mixture and toss to coat. Add the rest of the grated cheese and sprinkle with extra thyme.
  • Serve immediately piping hot!
