
Caramelised summer fruits with Meringues and cream

Ingredients
- 50 g honey
- 400 g strawberries (200g+200g)
- 6-8 apricots halved
- 1 lemon juice
- 200 g meringues plus extra to serve
- 200 ml cream whipped
Instructions
- In a large sauté pan, over high heat, melt the butter with the half of the strawberries and apricots with the honey.
- Drizzle some lemon juice and sauté for 30-45 seconds to just lightly soften and coat the fruits with the caramelised honey and butter. remove from the heat and set aside to cool.
- Once ready to serve, in a bowl, place the whipped cream and stir in fresh chopped strawberries and half of the meringues. Swirl to combine.
- Build the dessert. Spoon the caramelised fruits on the base of the serving container or glasses. Spoon the cream mixture and decorate with the rest of the meringues and caramelised fruits.
- Enjoy within a day.
