Preheat the barbecue to medium.
Using 2 skewers per portions, this will ensure the sardines can be flipped easily while grilling.
Tread 4 sardines using one skewer close to the head and the second skewer closer to the tail. Finish by trading a piece of lime on both skewers. repeat the process with the last 12 sardines into 3 other portions of 4 each.
Once prepare, prepare the garlic lime mayonnaise. Combine the mayonnaise with the garlic cloves and lime zest and enough juice to taste. Stir and check the seasoning. Keep aside until needed.
Prepare the salad leaves and place them on serving dishes with a drizzle of lime.
Once ready to serve, Brush the ridges of the barbecue with oil to help ensure the ridge don’t attach on the fish.
Brush some oil on the fish too. Season well with salt and pepper.
Place the sardines’ skewers on the barbecue and let the sardines cook / grill for 3-4 minutes depending of the heat of the barbecue.
Using the 2 skewers, flip the sardines and cook the other side for a further 3-4 minutes.
Season well if needed with extra salt.
Remove from the barbecue once ready and place on the prepared dishes with the salad. Drizzle with the lime mayonnaise and add an extra drizzle of lime if needed.
Enjoy while warm.
