Ingredients
- 8 chicken thighs
- 1 tsp corn flour
- 4 tbsp sweet chilli
- 2 tbsp oyster sauce
- 1 tbsp rice wine vinegar
- 500 g mash potatoes
- A few tbsp Rivesi.ie chilli crush
- Sesame oil optional
Instructions
- Preheat the air fryer to 200˚C.
- In a mixing bowl, combine the corn flour with 1 tbsp of cold water and add the sweet chilli jam, oyster sauce, rice wine vinegar. Stir to combine and check the seasoning.
- Add the chicken pieces and coat the chicken with the mixture. Marinate, if possible, for 10-15 minutes.
- If desired, spray some oil onto the air fryer basket, then place the pieces of chicken into the basket.
- Air fry for about 20-25 minutes, turning the chicken halfway through until cooked through and crispy the skin is crisp and golden brown.
- Serve with mash potatoes and spoon of chilli crush dressing or your favourite side.
