These roast potatoes – a Swedish original – have a lovely crispy crust and are a real
treat. Making them involves slicing into the potato to create slits, but taking care
not to cut right through.
Place 2 wooden spoons on a board and place a potato in-between the spoons.
Slice the potatoes into thin slices using the wooden spoons as a stopper so the potatoes stay in one piece once sliced. - The incisions should go about three-quarters of the way down.
Repeat until all the potatoes are prepared.
Place the potatoes in a roasting pan, drizzle with goose fat, season with salt nd pepper and sprinkle the rosemary.
Place in the oven and roast for about 40-45 minutes until cooked through, basting from time to time.
