Preheat air fryer to 200˚C for a minimum of 5 minutes.
In a bowl, combine the brown sugar, Ras el Hanout, salt, pepper, ginger powder, garlic powder and chilli. Coat the pork chops with some oil. Sprinkle spice mixture and allow the oil to help stick the spices.
Carefully place pork chops and quartered onions into air fryer basket and cook for 14 - 22 minutes or until cooked through (reaching a core temperature of 70˚C).
In the meantime, bring to the boil the vegetable stock and pour over the couscous. Set aside for 5-10 minutes to plump. Then, combine the cucumber, lemon juice, spinach leaves. Check the seasoning.
Carefully remove pork chop and serve the pork chops with the caramelised onions, couscous and if desired some of the cooking juices from the air fryer bowl.
