Preheat the air fryer to 200˚C.
in a bowl, Toss the garlic powder, smoked paprika, herbs and oil. Season well with salt and pepper.
Add the potatoes and onion and fresh garlic and toss to coat the vegetables.
Transfer in the air fryer and Airfry for 15-20 minutes until cooked through shaking the baskets if needed once or twice.
Once cooked through sprinkle some cheese over and if desired place back in the air fryer for a further 3-5 minutes until melted.
Remove from the air fryer and tip the potatoes into serving platter.
Pour over some of the chipotle salsa and toss once more to coat.
Sprinkle parsley and serve immediately.
Enjoy while warm.
