150ml white winewe used my own Kevin Dundon Sauvignon Blanc
120gfetacrumbled
250gfusilli pastaor other
20gbasil leavesfresh
2tbspbalsamic vinegaroptional

Instructions
bring a saucepan of salted water to the boil. Add the pasta and cook as per pack instruction. Drain and keep warm until ready.
In the meantime, in a sauté pan, over medium heat, drizzle the oil and add the shallots, garlic, and cherry tomatoes. Season well with salt and pepper.
Sauté for 5 minutes or until the tomatoes starts to burst.
Add the feta crumbled and the white wine. Stir and simmer for a further 2 minutes or so.
Once the pasta is cooked, add them to the dish and fold into the tomato mixture. Check the seasoning and sprinkle with extra basil leaves and balsamic vinegar if needed.
