Peanut marinated Chicken Skewers, cucumber salad

  • 60 g peanut butter we used Harry Nutter paprika brand
  • 3 cloves garlic crushed
  • 1 tbsp. Soy sauce
  • 1 tbsp. sesame oil
  • 1 tsp. ginger powder
  • 2 lime zest and juice
  • 500 g chicken fillet diced
  • 1 cucumber diced
  • 2 tbsp. coriander leaves
  • 1 tbsp basil leaves torn
  • 3 spring onions sliced
  • 1 tbsp. sunflower oil
  • 4 pita bread warmed
  • Salt and pepper


  • In a bowl, combine the peanut butter, 2 cloves crushed garlic, soy sauce, sesame oil, mirin, ginger and the juice and zest of one lime.. Add the chicken, Stir to coat and marinate for 20-30 minutes minimum or over night in the refrigerator covered in cling film.
  • Preheat a griddle pan or barbecue to medium heat.
  • Tread the marinated pieces on skewers with some pieces of peppers and onions.
  • Grill the chicken skewer for 3-5 minutes each side or until lightly charred and cooked through.
  • In the meantime, In a bowl , combine the cucumber, spring onions, coriander, basil, the last crushed garlic clove, 1 lime, segmented and the zest and a drizzle of oil.
  • Serve the chicken skewer over a warm pita. Removing the skewers and then topping with some of the salad preparations.
  • Enjoy immediately.
