In a bowl, combine the peanut butter, 2 cloves crushed garlic, soy sauce, sesame oil, mirin, ginger and the juice and zest of one lime.. Add the chicken, Stir to coat and marinate for 20-30 minutes minimum or over night in the refrigerator covered in cling film.
Preheat a griddle pan or barbecue to medium heat.
Tread the marinated pieces on skewers with some pieces of peppers and onions.
Grill the chicken skewer for 3-5 minutes each side or until lightly charred and cooked through.
In the meantime, In a bowl , combine the cucumber, spring onions, coriander, basil, the last crushed garlic clove, 1 lime, segmented and the zest and a drizzle of oil.
Serve the chicken skewer over a warm pita. Removing the skewers and then topping with some of the salad preparations.
