Spiced Sauteed Egg and Sausage

Ingredients
  

  • 6 eggs
  • 1 tbsp oil
  • 6 sausages
  • 1 onion chopped
  • 100 g butter
  • 4 baby potatoes cooked and halved
  • 2 cloves garlic finely chopped
  • 1 tbsp Cajun spices
  • 2 tbsp brown sugar
  • 2 tbsp coriander leaves to serve
  • salt and pepper

Instructions
 

  • in a saucepan, bring to boil the water. Carefully drop the eggs and boil for 5 minutes.
  • Remove from the heat and cool the eggs in ice water or under a running cold-water tap. This will help keep the egg to a semi hard boiled . but hard boiled will work too!
  • Once cooled, peel the eggs and cut in halves. keep aside.
  • Over medium heat, drizzle some oil and cook the sausages and onions until coloured.
  • Add the butter, and let it foam.
  • Add the garlic, Cajun spices, and sugar. Season generously with salt and pepper
  • Cook for a further 1-2 minutes, to coat and enhance the spices within the butter.
  • Add the halved boiled eggs and stir in the mixture.
  • Sprinkle the coriander and serve immediately.
