Place the potatoes, halved garlic bulb and onion in a saucepan and fill with water and a pinch of salt. Bring the saucepan to boil and simmer for 30 to 35 minutes until the potatoes are soft.
Drain the potatoes with the garlic and onion.
Lay the potatoes, onion and garlic on a baking tray and lightly press with a potatoes masher to smash the potatoes.
Next drizzle with oil, Cheese, oil, herbs and extra salt and pepper if needed. Place in the oven and roast for 25 to 35 minutes until coloured.
Remove from the oven and enjoy while warm with a side of salad leaves.
