Slice the courgette into ¼ inch / 5mm thick slices. Transfer to a bowl and drizzle with oil, garlic powder, salt and pepper. Gently toss to combine.
In a second bowl, combine panko and grated cheese on a plate season with salt and pepper and the dried herbs.
Set your air fryer to 200˚C/400°F to preheat the 5 minutes
Dip the slices of courgette into beaten egg then into panko mixture, pressing to coat.
Place the slices on the air fryer basket. Lightly spray with extra cooking spray if desired.
Place the basket in the air fryer and cook for 8 minutes until coloured and cooked. Turn halfway if desired.
Enjoy with your favourite side or as a snack. If done in advance reheat them in the air fryer for 2 minutes to bring extra crisp back.
