Preheat a griddle pan or large sauté pan over medium heat.
Drizzle some oil on the chicken pieces and place on the griddle pan. Cook depending on thickness for 4-5 minutes on both sides.
In the meantime, toast the slices of bread either on a second pan or in the toaster.
Once the chicken fillets are griddled, move them aside and keep warm.
Cook the fried egg in the same pan with a dollop of butter until cooked to your liking.
Once ready to serve, drizzle some butter on the toasted bread. Add some red onion marmalade, fresh goat cheese and slices of tomato. Season with salt and pepper.
Add the chicken fillet and the fried egg.
Serve immediately with some salad leaves.
