Preheat the oven to 160˚C. prepare a baking tray with parchment paper
In a bowl, beat the egg white to a soft peak. Slowly beat in the caster sugar to create a meringue.
In a second bowl, add the ground almonds, vanilla extract and amaretto.
Gently fold and beat the meringue mixture into the almond mixture until a smooth paste is achieved.
In a third bowl, combine 2 tbsp. icing sugar and 2 tbsp. caster sugar and flaked almonds.
Take about a walnut size of mixture and roll it in the sugar mixture.
Place on a baking tray.
Place in the oven and cook for 15-17 minutes until cooked.
Take them out of the oven, leave to cool for a couple of minutes on the tray and then place onto a cooling rack.
