Place the coconut milk and honey in a bowl and whisk to combine. Pour the mixture into an 8 x popsicle tray and place in the freezer for 4-5 hours or until hard.
Just before serving, Place the chocolate and coconut oil in a small bowl and melt over a saucepan of simmering water. Remove from the heat and keep aside.
Deep the popsicles in hot water and Remove them from the moulds. Drizzle with the chocolate and serve immediately.
