Preheat the oven to 230˚C /450˚F set with a pizza stone or up to 450˚C in a wood fired oven.
In the meantime, prepare your pizza dough.
Next, prepare the crème fraiche mix. In a bowl, combine the crème fraiche, egg yolk, a tablespoon of olive oil with salt and pepper.
Prepare the topping, such as fresh chopped onions, chopped speck or cured ham and grated cheese. (Parmesan and Mozzarella or other).
Roll the pizza dough thinly and spread the creme fraiche mixture evenly over dough, leaving a centimetre around the edge. Top with the meat, onions, cheese, and thyme.
Cook in the oven for 90- seconds in a woodfired oven or around 3-5 minutes until cooked to your liking in a conventional oven until the cheese is bubbling and the dough is well cooked and crispy.
Remove from the oven and serve immediately with some green salad and a drizzle of pesto if desired.
