Allow me to transport you to Mexico now with this recipe. This is a delicious recipe to have to hand and all of the ingredients are store room essentials so your shopping list will be minimal.

  • 4 soft flour tortillas
  • 200 g grated cheddar or mozzarella cheese
  • 4 rashers bacon cooked
  • 1 green chillies very finely diced
  • 1 red onion very finely diced
  • 1 bunch spring onions chopped roughly
  • 1 bunch basil freshly chopped
  • Seasoning
  • 4 plum tomatoes


  • Mix the cheese, chillies, bacon, red onion, tomato, spring onion and basil together.
  • Season lightly with a little salt and pepper.
  • Lay the flour tortillas out on the work surface and divide the cheese mixture between them. Place another tortilla wrap on top of the mixture to make a sort of sandwich.
  • Cut the quesadillas in quarters and refrigerate for a couple of minutes to make sure that they remain firm and not liable to lose their cheesy filling.
  • To Cook on the Pan:
  • Heat the pan with just a tiny drizzle of oil and pan fry on both sides, again until the cheese is melted.
  • You can cook these in their entirety also.(ie-do not quarter them)
  • Why not save this recipe until the summer and cook them on a hot barbecue.
