In a medium-sized bowl, beat the eggs together. In a second bowl, combine salt, freshly ground black pepper and flour.
And in a third bowl, mix the breadcrumbs with the parmesan cheese.
Drop a few chicken silvers into the flour mixture, tap to remove any excess and drench in the egg. Place it into the breadcrumb and coat the pieces thoroughly.
Remove onto a plate.
In a frying pan, over a low to medium heat, add the oil and place the chicken Goujon in the warm pan. Pan fry the chicken Goujons for 2 -3 minutes on each sides or until coloured and cooked through.
Serve with a few leaves of salads and red pepper jelly.
