In a large sauté pan, over high heat, pour in the oil over the salmon. Place in a sauté pan and cook for 2 minutes. Flip the salmons and add the brussels sprouts, red onion carrots and garlic.
Sprinkle some curry powder over.
Add the white wine and cream. reduce the heat to medium / low and simmer for 2 minutes or until the salmon is fully cooked and the sauce is coating the back of a spoon.
Remove from the heat, check the seasoning and serve immediately with some mash potato.
