Sweet chilli Pork Stir fry
The meat is sliced very thinly it will look a lot with a small quantity!

Pork chops
very thinly sliced into strips

yellow pepper
thinly sliced
1
carrot
sliced thinly
1
onion
sliced
1
red chilli
thinly sliced
1
cm
piece ginger
chopped

garlic cloves
crushed

tbsp
peanut rayu
optional

tbsp.
thai sweet chilli sauce
2
tbsp.
soy sauce
1/2
tsp
fish sauce
1
tbsp
honey
4
portion boiled rice
or egg noddle - optional to serve
Instructions
Have all your vegetables and meat sliced and ready to cook.
Heat the oil in a large wok, over very high heat until smoking hot, then add the pork and stirfry for a minute until golden and crisp.
Add the vegetables and for a further minute or so on high heat to slightly soften.
Add the peanut rayu if using, sweet chilli sauce, fish sauce, honey, and soy sauce.
Continue cooking and stiring the mixture for a further 2 minutes until the pork pieces are fully cooked and the mixture is well coated with the sauce.
Remove from the heat, drizzle some lime juice over and serve immediately with some boiled rice.
