Preheat a large saucepan or wok, until smoking hot.
Drizzle the oil and add the carrots, red onion, shallot, green pepper, green beans, garlic, ginger, red chilli.
Sauté for 3-5 minutes until the vegetables are just softened.
Add the coconut, soy sauce and lime zest if using.
Bring to the boil and simmer for 5 minutes or so.
Next, add the prawns and continue simmering for 3-5 minutes until cooked fully.
Remove from the heat and stir in the rice noodles, fresh mint, basil.
Check the seasoning and serve immediately.
