in a saucepan, bring to boil the water. Carefully drop the eggs and boil for 5 minutes.
Remove from the heat and cool the eggs in ice water or under a running cold-water tap. This will help keep the egg to a semi hard boiled . but hard boiled will work too!
Once cooled, peel the eggs and cut in halves. keep aside.
Over medium heat, drizzle some oil and cook the sausages and onions until coloured.
Add the butter, and let it foam.
Add the garlic, Cajun spices, and sugar. Season generously with salt and pepper
Cook for a further 1-2 minutes, to coat and enhance the spices within the butter.
Add the halved boiled eggs and stir in the mixture.
Sprinkle the coriander and serve immediately.
