Preheat the oven to 180˚c.
Line a baking tray with parchment paper.
In a small saucepan, melt the butter. set aside to cool for 2 minutes.
Next, in a bowl, pour the melted butter and add the caster sugar. Stir until smooth.
Add the lemon zest and juice, the egg and stir in the flour and baking powder. Stir until a sandy texture dough is achieved.
Set aside for 15 minutes for the dough to settle.
Then, sieve some icing sugar in a large bowl or dish.
With a tablespoon, create 12 walnut size balls and deep them in the icing sugar.
Place on the lined baking tray.
Transfer in the oven and bake for 15 minutes at 180˚C.
Remove from the oven and set aside for 5 minutes before removing from the baking tray.
Keep in a tight container and enjoy within a few days
