Kevin’s easy pasta

Ingredients
  

  • 400 g tagliatelle pasta or other
  • 30 ml olive oil + extra to serve
  • 1 onion chopped
  • 1 clove garlic chopped
  • 1 tsp. Fresh thyme
  • 1/2 tsp. oregano
  • 1/2 bay leaf
  • 50 g mozzarella grated
  • 50 g parmesan grated
  • ¼ tsp smoked paprika
  • 80 g baby spinach leaves

Instructions
 

  • Place your pasta to cook in a pot of salted boiling water. Roughly chop your garlic and make into a paste using the side of your knife and some sea salt.
  • Pour olive oil into a large wok and add the garlic and onion.
    Cook without browning them for a minute or so until translucent.
  • Add your smoked paprika and fresh herbs. Add salt and pepper to taste.
  • When your pasta is cooked, remove it from the heat and drain in a colander, reserving about 4 tbsp of water.
    Add your pasta to your wok and top with the spinach. Cook for 1 minute.
  • Add the mozzarella and parmesan, stirring to coat the pasta.
  • Serve immediately and garnish with olive oil and black pepper.
