Instructions
Set the slow cooker on high. In a food processor, blend the onion, ginger, garlic, bay leave and water into a fine paste and set aside.
In a sauté pan, sear the beef pieces to colour well with the coconut oil.
Place the beef in the slow cooker. Add the Rogan Josh paste, the onion mixture, tomato puree, yoghurt and Stir to combine.
Cover and cook for 4-5 hours on low or 7-8 hours on low or until fork tender.
Last-minute, stir in the chopped coriander and some red chilli slices. Serve with your favourite side of rice, or spiced spinach and potatoes.
Notes
If braising in the oven, it will need at least 2 hrs of cooking in the oven. 2 ½ – 3 hrs would be best at 150˚C
