waxy potatoes
thinly sliced, about 2–3mm thick

bacon lardon

onion
finely diced

garlic cloves
crushed

sprigs rosemary
chopped
Salt & Pepper to season
Instructions
in a sauté pan, over medium heat, pour some oil and add the potatoes, bacon, onion, garlic, and rosemary.
Over moderate heat, cook 8-10 minutes covered with a lid for the first 5 minutes, to help cook the potatoes faster.
Shake the pan every so often to have the uniform colouration. Check the seasoning.
Serve immediately.
